1. Selecting and Washing Potatoes

The process begins with choosing high-quality potatoes, preferably varieties like Russet or Maris Piper, which are high in starch and low in sugar. The potatoes are thoroughly washed to remove dirt and debris.

2. Peeling and Cutting

Next, the potatoes are peeled using mechanical peelers. They are then cut into uniform strips, usually about 1 cm thick, using specialized cutting machines. This ensures even cooking.

3. Blanching (Pre-Cooking)

The cut potatoes are blanched in hot water (around 70–80°C) or lightly fried at a lower temperature (160–180°C) for a few minutes. This step removes excess sugars, softens the fries, and helps achieve a crispy texture after the final fry.

4. Drying

After blanching, the fries are dried to remove moisture. This prevents splattering during deep frying and improves crispiness.

5. Deep Frying

The fries are then fried in vegetable oil (such as sunflower or canola oil) at a high temperature (around 180–190°C) for 2–3 minutes until golden and crispy. In industrial production, this step may be done partially before freezing.

6. Freezing (For Commercial Production)

Most mass-produced fries are quickly frozen after frying to preserve freshness. This allows them to be stored and shipped to restaurants or stores, where they are fried again before serving.

7. Seasoning and Packaging

After frying (or freezing), the fries are seasoned with salt or other flavorings. They are then packaged in airtight bags or boxes to maintain quality.

8. Final Preparation (Before Serving)

If the fries were pre-fried and frozen, they are fried again at high temperature for 3–4 minutes before serving to ensure crispiness.
